In an attempt to use up some of the endless array of chocolate we now have in our house i thought id have a last bash at some more easter treats for Easter Monday teatime. I found this recipe on the Neptune Home blog. Anyone who knows me well knows how much of a fan i am of everything neptune, its always simply stunning. This recipe is no exception. I adapted it to suit what we had in the cupboard.
Heres what i used:
110g melted salted butter
150g muscovado sugar – i used brown sugar that i nuked in the nutribullet for a few seconds
125g milk Chocolate for the brownies
40g Cocoa Powder
100g milk chocolate for the topping
a bag of mini eggs
My oven was set to 180
I used a 20cm tin lined with foil
I melted the butter and chocolate over simmering water, added in the cocoa powder, whisked the eggs and added the sugar to them then folded the eggs and sugar into the melted chocolate, butter and cocoa. I poured the mixture into the tin and cooked for 30 minutes.
Once cooked i let the brownies cool still in the tin for ten minutes then took them out and cut into squares of around 5cm. I topped with melted chocolate and mini eggs. They really are so easy to make and divine.
